 Shahi tukrey is a bread pudding in Pakistan and India that is particularly well-known in Delhi, Lucknow, and Hyderabad. It is called shahi tukra, which means "royal piece," in North India and Pakistan. It is made of bread fried in ghee, soaked in sugar syrup, and piled high with rabri, dried fruit, and nuts. Ingredients for shahi tukrey


Bread (Brown or white): 6 to 8
Banspati ghee: For deep frying

For Rabri Making

Whole milk: 1 liter
Condensed milk: 1 Cane
Milkmaid aur khoya: 100 gram
Saffron: 1 pinch
Green cardamom powder: 1/2teaspoon
Rose water:2 Tablespoon 
Cashew nuts: 10 to 12 (finely ground)
Almonds: 25 (peeled off and finally ground)
Pistachios:30 to 35 ( Finely ground)

Four Syrup Making

Sugar: 3/4 Cup or 150 gram
Water: 1/2 Cup
Green cardamom powder: 1/2 Teaspoon
Saffron: 1 Pinch
Rose water: 1 Teaspoon

Nuts For Garnishing

Chopped and sliced almonds: 3 tablespoon 
Chopped and sliced pistachios: 3 tablespoon 
Chopped and sliced cashews: 3 tablespoon 

Making of shahi tukrey

Step 1 frying the bread:

  • Trim the Brown edges of the bread slices and cut them into triangular shapes
  • Heat ghee in a deep fry Pan and then fry the bread slices in the hot oil until light brown. Drain fried slices on a plate lined with a kitchen paper towel.

Step 2 Making of Rabri (thickened milk):

  • Take a heavy bottom saucepan and add the milk and ground almonds, pistachios, and cashew nuts.
  • Mix in the powdered green cardamom thoroughly.
  • Add the saffron, cook on medium heat until the milk thickens (about 20 to 30 minutes), and stir frequently until the milk reaches the desired consistency.
  • Now add condensed milk and crumbled milkmaid and cook it for about 5 minutes more.
  • Add rose water and give it a good mix.
  • Remove from heat and let it be cooled.

Step 3 Making Sugar Syrup:

  • Add the sugar and water to a saucepan and cook over medium heat until it reaches one-string consistency.
  • Now add saffron and cardamom powder and cook the sugar syrup until it becomes thicker.
  • Mix in the rosewater, cook for one to two minutes, remove from heat, and set aside.

Step 4 Assembling:

  • Dip the bread slice for 10 to 15 seconds in the sugar syrup.
  • Pour the thickened milk (rabri) over the bread slices that have been coated in sugar syrup and arrange the bread pieces in a dish.
  • Now Spread crumbled milkmaid, chopped, and sliced nuts over the rabri-coated bread slices.
  • Serve at normal temperature or cold, after keeping it in the fridge for 4 hours, and enjoy it.
